Chisos Boot Company, an Austin-based cowboy boot maker, is challenging industry norms by building its supply chain around mature dairy-cow hides instead of calfskin. In a June 2026 video, the family-owned company founded in 2019 by Will Roman made its position clear: honesty is not a finish, it is the supply chain. The company does not use calfskin, opting instead for heritage cowhide that is tough enough for boots meant to be worn hard and repaired. "We work with tanneries that source from dairy farms and we don't use juvenile leathers," Roman said. "We're very particular about the standards that the entire supply chain is using when we pick a leather or any of our materials." The hides come from mature dairy cows, a byproduct of the dairy industry, which aligns with growing consumer interest in reducing waste and avoiding juvenile leathers.

Structural interiors are vegetable-tanned leather, including the hard insole, outsole, heel counter, and toe box. These parts are designed to conform to the foot over time, hold shape, and accept a cobbler's work later. "The type of legacy I want to leave does not allow me to cut corners, because then I would know," Roman said. "And I know that the type of people drawn to Chisos are similar. They don't cut corners in their lives, and they hold us to a higher standard as well."
